Science-Shmience: How Important is Color Science in Choosing a Camera?

You know what? You CAN tell the difference in color rendering between a Sony a6000 [B&H|Amazon] and a Canon Rebel SL1 [B&H|Amazon] -- which is to say there really are differences between Sony and Canon sensors.  Here's one possible explanation...
